New restaurant represents final piece of hotel's $25 million renovation

DAYTONA BEACH, Fla. - The Daytona Regional Chamber of Commerce and Hilton Daytona Beach Oceanfront Resort will hold a celebratory ribbon cutting for the newly opened Don Ricos Fresh-Mex Grill from 4 to 6 p.m. on December 8. The hotel's General Manager Jim Berkley and Director of Food and Beverage Ruwan Silva, along with representatives from the Chamber, will give remarks. Executive Chef Tony Johnson will prepare dishes from the restaurant for attendees to sample. A guacamole bar, tequila lime chicken wings, crab cake & A1A burger sliders, shrimp cocktail and margarita samples will be available.

The opening of Don Ricos Fresh-Mex Grill culminates an extensive $25 million renovation project that included significant enhancements throughout the hotel, including updates to its 60,000 square feet of meeting and special event spaces, beachfront cabana suites, dining and entertainment venues, pools, lobby and common areas. The result is a fresh, new look for Hilton Daytona Beach Oceanfront Resort - one that will translate into an elevated experience for guests and groups.

Don Ricos Fresh-Mex Grill is one of three onsite food and beverage outlets opened as a result of the renovation over the past year. It was preceded by the summertime openings of McCoys Rum Room, a sophisticated Caribbean-themed lounge offering the largest selection of rum in east Central Florida, and The Blind Turtle, a new outdoor bar that accompanied renovations to the hotel's expansive pool areas.

Located in the space formerly occupied by Legends Sports Bar, Don Ricos Fresh-Mex Grill offers a menu inspired by fresh, local seafood and signature cocktails made from fine spirits in a setting with soft lighting, modern furniture and vivid colors. Its inviting space allows guests to sit back and enjoy pristine ocean views accompanied by daily drink specials.
